Chicken & chorizo paella

 

Method 1

Ingredients

1 tbsp olive oil

2 chicken breasts fillets, cut into chunks

2 small onions, finely sliced

1 fat garlic clove, crushed

140g cooking chorizo, sliced

1 tsp turmeric

pinch of saffron

1 tsp paprika

300g paella rice

850ml hot chicken or vegetable stock

200g frozen peas

1 lemon, cut into wedges, to serve

½ small bunch of parsley, finely chopped, to serve

STEP 1

Heat the olive oil in a deep frying pan over a high heat. Brown the chicken all over – don’t cook completely. Once browned, transfer to a plate.

STEP 2

Reduce the heat to low, add the onions and cook slowly until softened, about 10 mins. Add the garlic, stir for 1 min, then toss in the chorizo and fry until it releases its oils.

STEP 3

Stir in the spices, then tip in the rice. Stir to coat the rice in the oils and spices for about 2 mins, then pour in the stock. Bring to the boil, return the chicken to the pan and simmer for about 20 mins, stirring occasionally.

STEP 4

Add the peas to the pan and simmer for a further 5 mins until the rice is cooked and the chicken is tender. Season well and serve with the lemon and parsley.


Method 2

Ingredients:

- 1 tbsp olive oil

- 1 onion, chopped

- 2 garlic cloves, minced

- 1 red bell pepper, sliced

- 1 yellow bell pepper, sliced

- 200g chorizo sausage, sliced

- 2 chicken breasts, diced

- 1 cup arborio rice

- 1 tsp smoked paprika

- 1 tsp dried oregano

- 1 pinch saffron threads

- 4 cups chicken broth

- 1 cup frozen peas

- Salt and pepper to taste

- Lemon wedges for serving

Instructions:

1. Heat olive oil in a large skillet or paella pan over medium heat.

2. Add onion and garlic, sauté until softened.

3. Add red and yellow bell peppers, chorizo, and chicken. Cook until chicken is browned.

4. Add arborio rice, smoked paprika, oregano, and saffron. Stir well to coat the rice.

5. Pour in chicken broth and bring to a simmer. Cook for about 15-20 minutes, stirring occasionally.

6. Add frozen peas and continue to cook until rice is tender and most of the liquid has been absorbed.

7. Season with salt and pepper to taste.

8. Remove from heat and let it sit for a few minutes.

9. Serve with lemon wedges on the side. Enjoy your delicious Chicken & Chorizo Paella!

Sichuan chicken

  Method 1 Ingredients 500g boneless chicken thighs cut into bite-sized pieces 25g dried Sichuan chillies deseeded and cut into 3 pieces neutral-tasting oil such as vegetable, for deep-frying 1 tbsp dried red Sichuan peppercorns 1 tbsp dried green Sichuan peppercorns 15g ginger peeled and finely chopped 4 garlic cloves finely chopped 2 spring onions finely sliced, whites and green parts separated 3 tbsp unsalted roasted peanuts 2 tbsp sesame seeds ½ tbsp light soy sauce ½ tsp sugar For the marinade ½ tsp ground white pepper ½ tsp chicken bouillon 1 tbsp Shaohsing wine 1½ tbsp light soy sauce 2½ tbsp cornflour 1 tbsp corn oil step 1 Combine all the marinade ingredients, except the cornflour and oil, with ¼ tsp salt in a large bowl, then stir in the chicken thigh pieces to coat. Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
