Method 1
Ingredients
100g cherry tomato
150g pack mini mozzarella balls, drained
handful basil
400g green tagliatelle
350g jar tomato sauce
4 tbsp fresh pesto
STEP 1
Halve the cherry tomatoes and use a small, sharp knife or a teaspoon to remove the seeds. Cut the mozzarella balls in half. Place one half inside each tomato, trimming the edges if necessary to fit it in. Either cut the smallest circles you can from a basil leaf or finely chop the leaves and scrunch into small circles. Place one at the centre of each mozzarella ball.
STEP 2
Boil the pasta. Meanwhile, heat through the tomato sauce. When the tagliatelle is cooked, drain and stir through the pesto and any remaining basil, chopped finely. Divide between 4-6 serving bowls. Spoon over some tomato sauce, then arrange the stuffed tomato eyeballs on top.
Method 2
Ingredients:
- 1 pound of spaghetti or pasta of your choice
- 1 jar of marinara sauce
- 1 pound of ground beef or ground turkey
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
- Mozzarella cheese
- Sliced black olives
- Marinara sauce for "blood"
Instructions:
1. Cook the pasta according to package instructions until al dente.
2. In a separate skillet, cook the ground beef or turkey over medium heat until browned. Add the onion, garlic, Italian seasoning, salt, and pepper. Cook until the onions are translucent.
3. Pour the marinara sauce into the skillet with the meat mixture and stir to combine. Let simmer for a few minutes.
4. To make the "eyeballs," take a small scoop of the meat mixture and roll it into a ball. Press a slice of black olive in the center for the pupil.
5. Place the meatballs on top of the cooked pasta.
6. Cut small pieces of mozzarella cheese and place them around the "eyeballs" to resemble the whites of the eyes.
7. Drizzle extra marinara sauce around the plate for a bloody effect.
8. Serve hot and enjoy your spooky Eyeball Pasta dish!
