Prawn fried rice

 

Method 1

Ingredients

250g long-grain brown rice

150g frozen peas

100g mangetout

1½ tbsp rapeseed oil

1 onion, finely chopped

2 garlic cloves, crushed

thumb-sized piece of ginger, finely grated

150g raw king prawns

3 medium eggs, beaten

2 tsp sesame seeds

1 tbsp low-salt soy sauce

½ tbsp rice or white wine vinegar

4 spring onions, trimmed and sliced

STEP 1

Cook the rice following pack instructions. Boil a separate pan of water and blanch the peas and mangetout for 1 min, then drain and set aside with the rice.

STEP 2

Meanwhile, heat the oil in a large non-stick frying pan or wok over a medium heat and fry the onion for 10 mins or until golden brown. Add the garlic and ginger and fry for a further minute. Tip in the blanched vegetables and fry for 5 mins, then the prawns and fry for a further 2 mins. Stir the rice into the pan then push everything to one side. Pour the beaten eggs into the empty side of the pan and stir to scramble them. Fold everything together with the sesame seeds, soy and vinegar, then finish with the spring onions scattered over.


Method 2

Ingredients:
- 1 cup of cooked rice
- 1/2 lb of prawns, peeled and deveined
- 2 eggs, beaten
- 2 cloves of garlic, minced
- 1 small onion, chopped
- 1/2 cup of mixed vegetables (such as peas, carrots, and corn)
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- Salt and pepper to taste
- Vegetable oil for cooking

Instructions:
1. Heat a tablespoon of vegetable oil in a large pan or wok over medium heat.
2. Add the minced garlic and chopped onion, and sauté until fragrant.
3. Add the prawns and cook until they turn pink and opaque.
4. Push the prawns to one side of the pan, and pour the beaten eggs into the empty space.
5. Scramble the eggs until fully cooked, then mix them with the prawns.
6. Add the cooked rice and mixed vegetables to the pan, stirring well to combine everything.
7. Pour the soy sauce and oyster sauce over the mixture, and continue to cook for another 3-4 minutes.
8. Season with salt and pepper to taste, and stir everything together until heated through.
9. Serve the prawn fried rice hot, garnished with chopped green onions if desired.

Sichuan chicken

  Method 1 Ingredients 500g boneless chicken thighs cut into bite-sized pieces 25g dried Sichuan chillies deseeded and cut into 3 pieces neutral-tasting oil such as vegetable, for deep-frying 1 tbsp dried red Sichuan peppercorns 1 tbsp dried green Sichuan peppercorns 15g ginger peeled and finely chopped 4 garlic cloves finely chopped 2 spring onions finely sliced, whites and green parts separated 3 tbsp unsalted roasted peanuts 2 tbsp sesame seeds ½ tbsp light soy sauce ½ tsp sugar For the marinade ½ tsp ground white pepper ½ tsp chicken bouillon 1 tbsp Shaohsing wine 1½ tbsp light soy sauce 2½ tbsp cornflour 1 tbsp corn oil step 1 Combine all the marinade ingredients, except the cornflour and oil, with ¼ tsp salt in a large bowl, then stir in the chicken thigh pieces to coat. Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high. Lightly toast the crumpets in a toaster or under the grill. Meanwhile, mix the passata, ketchup and oregano together in a bowl. Season.
