Sausages with lemon & rosemary roast potatoes


 Method 1

Ingredients

800g new potatoes cut in half

1 lemon, thinly sliced

3 tbsp rosemary or thyme leaves, chopped, plus a few extra sprigs, to serve

3 tbsp olive oil

600g sausages (around 9), meat squeezed out of the skin into bite-sized pieces

1 bunch of spring onions, cut into 4cm lengths

STEP 1

Heat the oven to 220C/ 200C fan/gas 8. Tip the potatoes into a large bowl and combine with the lemon slices, chopped herbs, olive oil and some seasoning. Toss well to evenly coat. Transfer to a baking sheet, spreading the potatoes out in an even layer.

STEP 2

Roast for about 20 mins until beginning to turn golden brown, add the sausagemeat and cook for another 10-15 mins until browned and cooked through. Add the spring onions and cook for another few minutes to soften. Scatter over the remaining herbs.


Method 2

Ingredients:

- 4 pork sausages

- 4 large potatoes, peeled and cut into chunks

- 1 lemon, sliced

- 4 sprigs of fresh rosemary

- 2 tablespoons of olive oil

- Salt and pepper to taste

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Place the potato chunks in a large roasting pan and drizzle with olive oil. Toss to coat evenly.

3. Add the sprigs of rosemary to the pan and season with salt and pepper.

4. Place the sausages on top of the potatoes and lay the lemon slices over them.

5. Roast in the oven for about 40-45 minutes, or until the sausages are cooked through and the potatoes are golden and crispy.

6. Serve hot and enjoy your delicious sausages with lemon & rosemary roast potatoes!

Sichuan chicken

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
