Spicy chicken & avocado wraps

 

Method 1

Ingredients

1 chicken breast (approx 180g), thinly sliced at an angle

generous squeeze juice 0.5 lime

½ tsp mild chilli powder

1 garlic clove, chopped

1 tsp olive oil

2 seeded wraps

1 avocado, halved and stoned

1 roasted red pepper from a jar, sliced

a few sprigs coriander, chopped

STEP 1

Mix the chicken with the lime juice, chilli powder and garlic.

STEP 2

Heat the oil in a non-stick frying pan then fry the chicken for a couple of mins – it will cook very quickly so keep an eye on it. Meanwhile, warm the wraps following the pack instructions or, if you have a gas hob, heat them over the flame to slightly char them. Do not let them dry out or they are difficult to roll.

STEP 3

Squash half an avocado onto each wrap, add the peppers to the pan to warm them through then pile onto the wraps with the chicken, and sprinkle over the coriander. Roll up, cut in half and eat with your fingers.



Method 2

Ingredients:
- 1 lb chicken breast, thinly sliced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 avocados, sliced
- 1/2 cup sour cream
- 1/4 cup hot sauce
- 4 large tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro

Instructions:
1. In a large skillet, heat olive oil over medium heat. Add chicken slices and season with paprika, cumin, garlic powder, salt, and pepper. Cook until chicken is fully cooked and slightly browned, about 5-7 minutes.

2. In a small bowl, mix together sour cream and hot sauce to create a spicy cream sauce.

3. Warm tortillas in a separate skillet or microwave for a few seconds.

4. To assemble the wraps, spread a layer of spicy cream sauce on each tortilla. Top with cooked chicken, sliced avocados, shredded lettuce, diced tomatoes, and chopped cilantro.

5. Fold the sides of the tortillas towards the center and roll up tightly to form a wrap.

6. Serve the spicy chicken & avocado wraps immediately and enjoy!

Sichuan chicken

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
