Peppered lamb & minty butter bean mash

 


Method 1

Ingredients

2 x 410g cans butter beans, drained and rinsed

6 tbsp olive oil

1 garlic clove, crushed

juice of 1 small lemon

small handful mint leaves, roughly chopped

4 leg of lamb steaks, weighing about 140g/5oz each

1 tbsp coarsley ground black pepper

85g bag watercress, to serve

STEP 1

Put the butter beans, 4 tbsp of the oil, the garlic and 3 tbsp of water into a pan and heat through. Smash the beans with a potato masher until you have a rough mash, stir in the lemon juice and mint, season to taste and keep warm.

STEP 2

Season each lamb steak with the black pepper and a sprinkling of salt. Heat the remaining oil in a large frying pan until really hot. Add the lamb steaks and cook for 3 minutes on each side for pink meat or until cooked to your liking. Spoon the mash onto four warm serving plates and top each with a lamb steak. Quickly stir half a cup of water into the lamb pan, boil to make a sauce and spoon over the lamb. Add a handful of watercress to each plate and serve.



Method 2

Ingredients:

- 4 lamb steaks

- 2 tbsp olive oil

- 1 tsp black peppercorns, crushed

- Salt, to taste

For the Minty Butter Bean Mash:

- 1 can butter beans, drained and rinsed

- 2 tbsp butter

- 2 cloves of garlic, minced

- 1/4 cup fresh mint leaves, chopped

- Salt and pepper, to taste

Instructions:

1. Preheat your grill or grill pan over medium-high heat.

2. Brush the lamb steaks with olive oil and season with crushed peppercorns and salt.

3. Grill the lamb steaks for about 4-5 minutes on each side for medium-rare, or longer to your desired doneness.

4. While the lamb is cooking, prepare the minty butter bean mash.

5. In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.

6. Add the drained butter beans to the pan and cook for another 3-4 minutes until heated through.

7. Mash the butter beans using a fork or potato masher until you reach your desired consistency.

8. Stir in the chopped mint leaves and season with salt and pepper to taste.

9. Serve the grilled lamb steaks with a generous dollop of the minty butter bean mash on the side. Enjoy your meal!

Sichuan chicken

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
