Pork tenderloin with chipotle sauce & pickled red onions

 


Method 1


Ingredients

2 red onions

one thickly and one thinly sliced

juice 2 limes

2 tsp dried oregano

8 fat garlic cloves

unpeeled

6 medium plum tomatoes

halved

2 tbsp chipotle paste

(we used Discovery, available from Waitrose)

2 tbsp chilli powder

3 tbsp soft brown sugar

2 pork tenderloins

about 500g each

coriander

sprigs and warm soft tortillas (flour or corn), to serve

Place the thinly sliced onion in a bowl with juice 1 lime, half the oregano and a pinch each of salt and pepper. Set aside.

Dry-fry the whole garlic in a non-stick pan until blackened on both sides, about 8 mins, then peel. Heat the grill. Arrange the thickly sliced onion on a baking tray with the tomatoes, cut-side up. Season and grill until blackened, about 8 mins. Tip into a bowl with the garlic, chipotle paste, 1 tsp chilli powder, 1 tbsp sugar and remaining lime juice. Season and whizz in a blender until smooth. Gently heat through in a pan.

Rub the pork with the remaining chilli powder, oregano, sugar and seasoning. Grill for 5 mins each side until cooked. Serve sliced in warm tortillas with some sauce, the pickled onions and coriander.




Method 2


For the Pork Tenderloin:

- 1 pork tenderloin (approximately 1 lb)

- Salt and pepper to taste

- 2 cloves of garlic, minced

- 1 tablespoon olive oil


For the Chipotle Sauce:

- 2 chipotle peppers in adobo sauce

- 1/4 cup chicken or beef broth

- 1 tablespoon honey

- 1 teaspoon cumin

- Salt and pepper to taste


For the Pickled Red Onions:

- 1 red onion, thinly sliced

- 3/4 cup apple cider vinegar

- 1/4 cup water

- 2 tablespoons sugar

- 1 teaspoon salt


Instructions:

1. Preheat your oven to 400°F (200°C).

2. Season the pork tenderloin with salt, pepper, and minced garlic. Heat olive oil in a skillet over medium-high heat and sear the pork tenderloin on all sides until browned, about 4-5 minutes per side.

3. Transfer the pork tenderloin to a baking dish and roast in the oven for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

4. While the pork is roasting, make the chipotle sauce by blending the chipotle peppers, broth, honey, cumin, salt, and pepper in a blender or food processor until smooth. Set aside.

5. For the pickled red onions, combine the sliced red onions, apple cider vinegar, water, sugar, and salt in a small saucepan over medium heat. Bring to a simmer and cook for about 5 minutes until the onions start to soften. Remove from heat and let cool.

6. Once the pork is done cooking, let it rest for a few minutes before slicing. Serve the pork tenderloin with the chipotle sauce drizzled on top and a spoonful of pickled red onions on the side.

Sichuan chicken

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
