Cheeseburgers

 

Method 1

Ingredients

1kg minced beef

300g breadcrumbs

140g extra-mature or mature cheddar

grated

4 tbsp Worcestershire sauce

1 small bunch parsley

finely chopped

2 eggs

beaten

To serve

split burger buns

sliced tomatoes

red onion

slices

lettuce

tomato sauce, coleslaw, wedges or fries

Crumble the mince in a large bowl, then tip in the breadcrumbs, cheese, Worcestershire sauce, parsley and eggs with 1 tsp ground pepper and 1-2 tsp salt. Mix with your hands to combine everything thoroughly.

Shape the mix into 12 burgers. Chill until ready to cook for up to 24 hrs. Or freeze for up to 3 months. Just stack between squares of baking parchment to stop the burgers sticking together, then wrap well. Defrost overnight in the fridge before cooking.

To cook the burgers, heat grill to high. Grill burgers for 6-8 mins on each side until cooked through. Meanwhile, warm as many buns as you need in a foil-covered tray below the grilling burgers. Let everyone assemble their own, served with their favourite accompaniments.

🧂 Ingredients

For the Beef Patties:

Ground beef – 500g (1.1 lbs) (80/20 ratio – ideal for juicy burgers)

Salt – 1 tsp

Black pepper – ½ tsp

Garlic powder – ½ tsp (optional)

Onion powder – ½ tsp (optional)

For Assembling:

Burger buns – 4 (brioche or sesame seed preferred)

Cheese slices – 4 (American, cheddar, Swiss, or your choice)

Lettuce – 4 leaves

Tomato – 1 large, sliced

Red onion – 1 small, thinly sliced

Pickles – sliced (optional)

Ketchup, mustard, or mayo – as desired

Butter – for toasting buns

🍳 Instructions

1. Make the Patties

Divide the ground beef into 4 equal portions (~125g each).

Gently shape into patties about 1 cm (½ inch) thick and slightly wider than your buns.

Press a small dimple in the center of each patty with your thumb — helps prevent puffing.

2. Season the Patties

Right before cooking, season both sides with salt, pepper, and optional garlic/onion powder.

3. Cook the Patties

Grill or Skillet: Preheat to medium-high heat.

Cook patties for 3–4 minutes per side for medium doneness.

Add a cheese slice on top in the last minute of cooking and cover to melt.

4. Toast the Buns

Butter the inside of each bun and toast on the grill or skillet until golden.

5. Assemble the Burgers

Bottom bun

Sauce of choice (e.g., mayo or ketchup)

Lettuce leaf

Cheeseburger patty

Tomato slice

Onion and pickles

Top bun

📝 Tips for the Best Cheeseburgers

Don’t overwork the beef when forming patties — keep it loose and tender.

Use good-quality beef (at least 80% lean) for flavor and juiciness.

Let the cooked patties rest for 2 minutes before assembling.

Use steam or a lid to melt cheese more evenly.

🍟 Serving Suggestions

Serve with fries, coleslaw, or onion rings.

Add sides like potato salad or a pickle spear.

Offer optional toppings at the table: bacon, jalapeños, sautéed mushrooms, or avocado.

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
