Cranachan

 


Method 1

Ingredients

2 tbsp medium oatmeal

300g fresh British raspberries

a little caster sugar

350ml double cream

(we used Jersey double cream)

2 tbsp heather honey

2-3 tbsp whisky

to taste

step 1

To toast the oatmeal, spread it out on a baking sheet and grill until it smells rich and nutty. It will not darken quickly, so use your sense of smell to tell you when it is nutty enough. Cool the oatmeal.

Make a raspberry purée by crushing half the fruit and sieving. Sweeten this to taste with a little caster sugar. Whisk the double cream until just set, and stir in the honey and whisky, trying not to over-whip the cream. Taste the mix and add more of either if you feel the need.

Stir in the oatmeal and whisk lightly until the mixture is just firm. Alternate layers of the cream with the remaining whole raspberries and purée in 4 serving dishes. Allow to chill slightly before eating.

Method 2

🍓 Traditional Cranachan Recipe

✅ Serves: 4

⏱ Prep Time: 15 mins | Chill Time (optional): 30 mins

🔸 Ingredients

300ml (1¼ cups) double cream (heavy cream)

3 tbsp Scottish whisky (or to taste – optional)

2 tbsp runny honey (heather honey if possible)

75g (¾ cup) pinhead or rolled oats

250g (about 2 cups) fresh raspberries

Optional: extra honey or whisky for drizzling, and a few mint leaves for garnish

🔪 Instructions

🔥 1. Toast the oats:

Heat a dry frying pan over medium heat.

Add the oats and toast them gently, stirring frequently, until golden and nutty-smelling (3–5 mins).

Set aside to cool completely.

🍶 2. Whip the cream:

In a bowl, whip the double cream until it forms soft peaks — don’t over-whip.

Gently fold in the whisky and honey to taste. You can adjust the amounts depending on your preference for sweetness and strength.

🍓 3. Crush some raspberries:

Lightly mash half the raspberries with a fork to make a rough purée.

Keep the rest whole for layering.

🥄 4. Assemble the Cranachan:

In individual glasses or bowls, layer the ingredients:

Start with a spoonful of cream

Add some mashed raspberries

Sprinkle some toasted oats

Add whole raspberries

Repeat layers as desired, ending with cream and a final sprinkle of oats and berries on top.

❄️ 5. Chill (optional):

You can chill for 30 minutes to let the flavors meld, or serve immediately.

✅ Tips:

Swap raspberries for other berries (e.g. blackberries or strawberries) in a pinch.

For a kid-friendly version, skip the whisky and use a touch of vanilla extract.

Want a twist? Add a spoon of Greek yogurt to the cream for tang.

Sichuan chicken

  Method 1 Ingredients 500g boneless chicken thighs cut into bite-sized pieces 25g dried Sichuan chillies deseeded and cut into 3 pieces neutral-tasting oil such as vegetable, for deep-frying 1 tbsp dried red Sichuan peppercorns 1 tbsp dried green Sichuan peppercorns 15g ginger peeled and finely chopped 4 garlic cloves finely chopped 2 spring onions finely sliced, whites and green parts separated 3 tbsp unsalted roasted peanuts 2 tbsp sesame seeds ½ tbsp light soy sauce ½ tsp sugar For the marinade ½ tsp ground white pepper ½ tsp chicken bouillon 1 tbsp Shaohsing wine 1½ tbsp light soy sauce 2½ tbsp cornflour 1 tbsp corn oil step 1 Combine all the marinade ingredients, except the cornflour and oil, with ¼ tsp salt in a large bowl, then stir in the chicken thigh pieces to coat. Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high. Lightly toast the crumpets in a toaster or under the grill. Meanwhile, mix the passata, ketchup and oregano together in a bowl. Season. Chop your chosen toppings into small pieces – young children can tear basil, or chop soft veg in a cup using safety scissors. step 2 Line a baking tray with foil.
