Easy chocolate pudding

 

Method 1

Ingredients

100g butter

or margarine, plus extra for the bowl

2 tbsp golden syrup

100g dark muscovado sugar

150ml/¼ pint milk

1 egg

(large or medium)

1 heaped tbsp cocoa powder

225g self-raising flour

minus 1 heaped tbsp

1 tsp ground cinnamon

¼ tsp bicarbonate of soda

For the sauce

4 tbsp milk

4 tbsp cream

1 tbsp golden syrup

100g good-quality dark chocolate

step 1

Butter the inside of a 1.2 litre pudding bowl and line the base with a disc of buttered greaseproof paper.

Melt the butter, syrup and sugar in a saucepan. Remove from the heat and stir in the milk and egg. Add the cocoa to the flour, then tip this mixture into the pan with the cinnamon and soda.

Pour the mixture into the pudding bowl, cover tightly with foil and steam for 11⁄4 hours. Just before the end, heat the sauce ingredients until melted, stirring all the time.

Turn the pudding out (run a knife around the inside of the bowl if necessary) and discard the paper disc. Pour the sauce over the top and serve immediately.

500ml (2 cups) milk (whole milk is best, but semi-skimmed works)

100g (½ cup) granulated sugar

30g (¼ cup) unsweetened cocoa powder

30g (¼ cup) cornstarch (aka cornflour)

¼ tsp salt

100g (3.5 oz) dark or semi-sweet chocolate, chopped (or use chocolate chips)

1 tsp vanilla extract

15g (1 tbsp) butter (optional, for extra richness)

🍳 1. Mix dry ingredients:

In a medium saucepan (off the heat), whisk together:

Sugar

Cocoa powder

Cornstarch

Salt

πŸ₯„ 2. Add milk:

Gradually whisk in the milk to prevent lumps.

πŸ”₯ 3. Cook until thickened:

Place the pan over medium heat. Cook, whisking constantly, until the mixture thickens and just starts to bubble (about 5–8 minutes).

Once bubbling, cook for 1 more minute while whisking.

🍫 4. Add chocolate & finish:

Remove from heat and stir in:

Chopped chocolate

Vanilla extract

Butter (if using)

Stir until fully melted and smooth.

❄️ 5. Chill or serve:

Pour into bowls or cups.

Cover with plastic wrap (press it directly on the surface to prevent skin forming).

Chill for at least 30–60 minutes — or enjoy it warm if you like!

✅ Quick Tips:

For a lighter version: Use low-fat milk (though texture will be less rich).

For extra decadence: Replace part of the milk with cream.

For mocha flavor: Add 1 tsp instant coffee with the dry mix.

Method 1 Ingredients 1 tbsp ponzu sauce ½ tbsp rice vinegar 5g ginger, peeled and grated 1 tsp sesame oil 300g silken tofu 100g edamame beans 250g pouch cooked quinoa 100g radishes, sliced 2 carrots, peeled into ribbons 2 spring onions, finely sliced 2 small seaweed thins, crumbled 1 tsp sesame seeds STEP 1 Combine the ponzu, vinegar, ginger and sesame oil in a bowl.
