Sloppy joes

 


Method 1

Ingredients

1tbsp vegetable oil

1 onion

finely chopped

2 small red peppers

or yellow peppers, finely chopped

400g minced beef

2 x 400g cans chopped tomatoes

4tbsp Nando's PERi-BBQ sauce

4 cheese

slices

6 burger buns

crispy onions

to serve

tbsp iceberg lettuce

to serve

step 1

Heat the oil in a deep frying pan, and tip in the mince, breaking it up with a wooden spoon as you go, until browned all over. Stir in the onion and pepper and cook for 8-10 mins until softened. Tip in the tomatoes and Nando's PERi-BBQ sauce, and season. Simmer for 20-25 mins until the sauce has thickened.

Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

🍔 Sloppy Joes

📝 Ingredients (Serves 4–6):

🔸 For the Sloppy Joe Filling:

1 lb (450g) ground beef (or ground turkey)

1 small onion, finely chopped

½ green bell pepper, finely chopped (optional but classic)

2 cloves garlic, minced

¾ cup (180ml) ketchup

1 tbsp tomato paste (for richness — optional)

1 tbsp yellow mustard

1 tbsp Worcestershire sauce

1 tbsp brown sugar

½ tsp salt (to taste)

½ tsp black pepper

¼ tsp smoked paprika or chili powder (optional, for depth)

Splash of water or beef broth (as needed for consistency)

🔸 For Serving:

4–6 hamburger buns, toasted if desired

Optional toppings: sliced pickles, cheddar cheese, jalapeños, or coleslaw

👩‍🍳 Instructions:

1. Cook the Meat & Veggies:

Heat a skillet over medium-high heat.

Add ground beef and cook until browned. Drain excess fat.

Add chopped onion, bell pepper, and garlic. Sauté 3–4 minutes until soft.

2. Add the Sauce:

Stir in ketchup, tomato paste, mustard, Worcestershire sauce, brown sugar, salt, pepper, and paprika.

Add a splash of water or broth to loosen the mixture.

Simmer on low for 10–15 minutes, stirring occasionally, until thick and saucy.

Tip: If it’s too thick, add a bit more water. Too loose? Simmer uncovered a few more minutes.

3. Assemble & Serve:

Spoon the hot filling generously onto buns.

Serve warm with optional toppings.

🔄 Variations:

Spicy version: Add hot sauce or diced jalapeños.

BBQ Sloppy Joes: Replace ketchup with BBQ sauce.

Sloppy Joe sliders: Use mini buns for party-sized sandwiches.

Ponzu tofu poke bowl

Method 1 Ingredients 1 tbsp ponzu sauce ½ tbsp rice vinegar 5g ginger, peeled and grated 1 tsp sesame oil 300g silken tofu 100g edamame beans 250g pouch cooked quinoa 100g radishes, sliced 2 carrots, peeled into ribbons 2 spring onions, finely sliced 2 small seaweed thins, crumbled 1 tsp sesame seeds STEP 1 Combine the ponzu, vinegar, ginger and sesame oil in a bowl. Pat the tofu dry using kitchen paper and tear into chunks, then gently toss in the ponzu mixture. Baked ham hock pots
