Brie & cranberry filo parcels

 

Method 1

Ingredients

6 sheets filo pastry

75g melted butter

4 tbsp cranberry sauce

plus extra to serve

100g vegetarian brie

cut into 18 pieces

1 tbsp poppy seeds

step 1

Heat the oven to 200C/180C fan/gas 6 and line two baking trays with baking parchment. Unravel a sheet of filo pastry onto a chopping board, covering the rest of the filo with a damp tea towel so it doesn’t dry out. Brush the filo sheet liberally with some of the melted butter, then cut into three strips lengthways.

Spoon ½ tsp cranberry sauce over the top right-hand corner of each pastry strip and place a piece of brie on top. Fold the pastry over the filling to create a triangle, then continue to fold the pastry over itself down the length of the strip. Brush with more butter to seal, then sprinkle over the poppy seeds and place on the lined baking tray. Repeat with the remaining ingredients. The parcels can be covered and chilled in the fridge for up to a day or frozen for up to three months.

Bake for 15-20 mins (or 20-25 mins from frozen) until deep golden brown. Leave to stand for 5 mins before serving with some extra cranberry sauce.

Method 2

🧀 Brie & Cranberry Filo Parcels

⏱️ Ready in: 30 minutes

Makes: 12 parcels

🛒 Ingredients:

6 sheets of filo pastry (defrosted if frozen)

150–200g Brie, cut into 12 small cubes

3–4 tbsp cranberry sauce (smooth or with whole berries)

50g melted butter (or olive oil, for brushing)

Fresh thyme leaves (optional, for a savoury note)

Cracked black pepper, to taste

🔪 Method:

1. Preheat oven to 180°C (350°F fan) and line a baking tray with parchment.

2. Prepare the filo sheets:

Cut each filo sheet into 4 equal rectangles (you’ll need 12 rectangles total – overlap pieces if needed).

Keep filo covered with a damp cloth to prevent drying out.

3. Assemble the parcels:

Take one filo rectangle and brush lightly with melted butter.

Place a cube of Brie in the centre, top with 1/2 tsp cranberry sauce, a sprinkle of thyme (if using), and a little black pepper.

Fold the corners up and pinch/twist together to form a little parcel or "money bag" shape. Brush the outside with a little more butter.

🧁 Alternative shape: You can also fold them into triangles by folding the filo over diagonally and sealing the edges.

4. Bake:

Place on the prepared tray and bake for 12–15 minutes, until golden and crisp.

5. Serve warm, ideally right out of the oven while the Brie is still melted and gooey.

🌿 Optional Extras:

Add a few chopped toasted walnuts or pecans inside for crunch.

Swap Brie for Camembert or a creamy blue cheese for variation.

Use chilli jam instead of cranberry sauce for a sweet-spicy twist.

Ponzu tofu poke bowl

Method 1 Ingredients 1 tbsp ponzu sauce ½ tbsp rice vinegar 5g ginger, peeled and grated 1 tsp sesame oil 300g silken tofu 100g edamame beans 250g pouch cooked quinoa 100g radishes, sliced 2 carrots, peeled into ribbons 2 spring onions, finely sliced 2 small seaweed thins, crumbled 1 tsp sesame seeds STEP 1 Combine the ponzu, vinegar, ginger and sesame oil in a bowl. Baked ham hock pots
