Cajun chicken burgers

 


Method 1

Ingredients

4 skinless chicken breasts

2 tbsp olive oil

4 rashers smoked bacon

2 avocados

4 ciabatta

rolls, split

4 thin slices of your favourite cheese

4 small handfuls baby spinach

leaves

mayonnaise

to serve (optional)

For the cajun seasoning

1 tbsp ground cumin

1 tbsp ground coriander

1 tbsp paprika

step 1

Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.

While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.

To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

🍔 Cajun Chicken Burgers Recipe

🔹 Ingredients (Serves 4)

For the Chicken Patties:

500g (about 1 lb) ground chicken (or finely chopped chicken breast)

1 ½ tsp Cajun seasoning (store-bought or homemade, see below)

½ tsp garlic powder

½ tsp onion powder

½ tsp smoked paprika

Salt & pepper to taste

1 tbsp chopped fresh parsley (optional)

1 tbsp olive oil (for frying or grilling)

Optional: Homemade Cajun Seasoning Mix:

1 tsp smoked paprika

½ tsp garlic powder

½ tsp onion powder

½ tsp dried oregano

½ tsp dried thyme

¼ tsp cayenne pepper (adjust to taste)

¼ tsp black pepper

¼ tsp salt

For Serving:

4 burger buns (toasted)

Lettuce leaves

Tomato slices

Red onion slices

Pickles (optional)

Mayonnaise or spicy mayo (see note)

Cheese slices (optional – cheddar or pepper jack work well)

🔹 Instructions

Make the Chicken Patties:

In a bowl, combine ground chicken with Cajun seasoning, garlic powder, onion powder, paprika, salt, pepper, and parsley.

Mix gently until just combined.

Form into 4 equal-sized patties (wet your hands to prevent sticking).

Cook the Patties:

Heat olive oil in a skillet or grill pan over medium heat.

Cook patties for 5–6 minutes per side, or until fully cooked (internal temp of 75°C / 165°F).

Add cheese slices on top during the last minute, if using.

Toast the Buns:

Lightly toast burger buns in a dry pan or oven for 1–2 minutes.

Assemble the Burgers:

Spread mayo or spicy mayo on the buns.

Layer lettuce, the Cajun chicken patty, tomato, red onion, and pickles.

Top with the bun lid.

🔹 Spicy Mayo Idea:

Mix 3 tbsp mayonnaise with 1 tsp hot sauce (like sriracha) and a pinch of Cajun seasoning.

Ponzu tofu poke bowl

Method 1 Ingredients 1 tbsp ponzu sauce ½ tbsp rice vinegar 5g ginger, peeled and grated 1 tsp sesame oil 300g silken tofu 100g edamame beans 250g pouch cooked quinoa 100g radishes, sliced 2 carrots, peeled into ribbons 2 spring onions, finely sliced 2 small seaweed thins, crumbled 1 tsp sesame seeds STEP 1 Combine the ponzu, vinegar, ginger and sesame oil in a bowl.
