Cajun turkey steaks with pineapple salsa

 


Method 1

Ingredients

1 red onion

finely chopped

1 tbsp sunflower oil

1 red pepper

deseeded and diced

200g basmati rice

450ml chicken stock

400g can kidney bean

rinsed and drained

4 turkey

steaks

2 tsp Cajun seasoning

5 140g fresh pineapple

(or 220g can pineapple rings, drained)

½ green chilli

finely chopped

juice 1 lime

step 1

Reserve 2 tbsp of the onion for the salsa. Heat the oil in a saucepan and cook the remaining onion and half the pepper for 4 mins or until softened and coloured. Stir in the rice, then pour in the stock. Add the kidney beans and a pinch of salt. Bring to the boil, stir once, cover the pan, then reduce the heat to a gentle simmer. Cook for 15 mins until the rice is tender and the liquid absorbed.

Dust the turkey steaks with the Cajun spice and griddle or fry in a non-stick pan for about 4-6 mins on each side until cooked through. Cut the pineapple into small pieces and mix together with the reserved red onion, pepper, green chilli and lime juice. Spoon some salsa over each steak and serve with the rice.

🍽️ Cajun Turkey Steaks with Pineapple Salsa

🔹 Ingredients (Serves 2–4)

For the Cajun Turkey Steaks:

2–4 turkey breast steaks (approx. 500g total)

1 ½ tbsp Cajun seasoning (store-bought or homemade – see below)

1 tbsp olive oil

Salt & pepper to taste

Juice of ½ lime (optional, for marinade)

Optional Homemade Cajun Seasoning:

1 tsp paprika (smoked or regular)

½ tsp garlic powder

½ tsp onion powder

½ tsp dried oregano

½ tsp dried thyme

¼ tsp cayenne pepper (adjust to taste)

¼ tsp black pepper

¼ tsp salt

For the Pineapple Salsa:

1 cup fresh pineapple, finely diced

½ red bell pepper, finely diced

¼ red onion, finely diced

1 small red chili or jalapeño, deseeded & finely chopped (optional)

Juice of 1 lime

Small handful fresh coriander (cilantro), chopped

Salt to taste

🔹 Instructions

1. Prep the Turkey Steaks:

Pat turkey steaks dry with paper towel.

Rub with olive oil, Cajun seasoning, salt, and lime juice (if using).

Let marinate for 10–30 minutes (or longer in the fridge for more flavor).

2. Make the Pineapple Salsa:

Combine pineapple, red pepper, onion, chili (if using), lime juice, and coriander in a bowl.

Season with a pinch of salt.

Let sit for 10–15 minutes to let the flavors meld.

3. Cook the Turkey Steaks:

Heat a grill, grill pan, or skillet over medium-high heat.

Cook turkey steaks for 4–5 minutes per side, or until cooked through (internal temp 75°C / 165°F).

Let rest for 2 minutes before serving.

4. Serve:

Plate turkey steaks with a generous spoonful of pineapple salsa on top or on the side.

Great with rice, salad, or grilled veggies.

🔹 Optional Add-ons:

Serve with coconut rice for tropical vibes.

Add avocado slices or a dollop of sour cream for creaminess.

Turn into tacos with soft tortillas and shredded lettuce.

Ponzu tofu poke bowl

Method 1 Ingredients 1 tbsp ponzu sauce ½ tbsp rice vinegar 5g ginger, peeled and grated 1 tsp sesame oil 300g silken tofu 100g edamame beans 250g pouch cooked quinoa 100g radishes, sliced 2 carrots, peeled into ribbons 2 spring onions, finely sliced 2 small seaweed thins, crumbled 1 tsp sesame seeds STEP 1 Combine the ponzu, vinegar, ginger and sesame oil in a bowl.
