Chorizo bean burgers

 

Method 1

Ingredients

100g mini cooking chorizo

skins removed

3 pork sausages

squeezed from their skins

¼ tsp smoked paprika

1 tbsp lime juice

plus wedges to serve

small bunch coriander

chopped

½ x 400g can mixed beans

drained and rinsed

1 medium egg

lightly whisked

1 ½ tbsp olive oil

plus extra to drizzle

2 ciabatta

rolls, split and toasted

soured cream, avocado, small handful rocket and chips

to serve (optional)

In a food processor, pulse the chorizo, sausagemeat, paprika, lime juice and coriander until well combined. Add the beans and some seasoning, and quickly pulse again to mix. Tip into a bowl and mix in just enough egg (about half) to bind. Shape into 2 fat burgers, cover and chill for 15 mins. Meanwhile, heat oven to 200C/180C fan/gas 6.

Heat the oil in a pan and fry the burgers for 3 mins on each side. Transfer to a baking sheet and cook in the oven for a further 10 mins until cooked through.

Serve the burgers in rolls with soured cream, avocado and rocket, with chips and lime wedges on the side, if you like.

Method 2

🌶️ Chorizo & Bean Burgers

📝 Ingredients (Makes 4 burgers):

150g cooking chorizo, casing removed and finely chopped

1 can (400g) beans, drained and rinsed (black beans, kidney beans, or mixed beans work well)

1 small red onion, finely chopped

1 garlic clove, minced

1 tsp smoked paprika

½ tsp ground cumin (optional)

1 tbsp tomato purée (or ketchup)

1 egg (or 1 tbsp flaxseed + 2.5 tbsp water for vegan version)

50g breadcrumbs (or oats blitzed into crumbs)

Salt & pepper to taste

Olive oil for frying

🍳 Optional for Serving:

Burger buns or toasted rolls

Lettuce, tomato slices, red onion

Spicy mayo or aioli

Pickles or jalapeños

🔧 Instructions:

Cook the Chorizo

Heat a little oil in a pan over medium heat.

Add chopped chorizo and cook for 4–5 minutes until browned and slightly crisp. Set aside to cool slightly.

Mash the Beans

In a large bowl, mash the beans with a fork or potato masher — leave a few chunks for texture.

Mix the Burger Base

Add the cooked chorizo, onion, garlic, spices, tomato purée, egg, and breadcrumbs to the beans.

Mix until everything holds together. If it's too wet, add a little more breadcrumb.

Form Patties

Shape into 4 burger patties. Chill for 15–30 minutes if you have time — helps them hold together better when cooking.

Cook

Heat a little oil in a frying pan over medium heat.

Fry the burgers for 3–4 minutes on each side until golden and heated through.

Assemble

Serve in buns with your favorite toppings and sauces.

🌱 Make it Meat-Free:

Swap chorizo for vegetarian chorizo, or use smoked paprika + sun-dried tomatoes + a pinch of chili flakes for a smoky flavor.

Ponzu tofu poke bowl

Method 1 Ingredients 1 tbsp ponzu sauce ½ tbsp rice vinegar 5g ginger, peeled and grated 1 tsp sesame oil 300g silken tofu 100g edamame beans 250g pouch cooked quinoa 100g radishes, sliced 2 carrots, peeled into ribbons 2 spring onions, finely sliced 2 small seaweed thins, crumbled 1 tsp sesame seeds STEP 1 Combine the ponzu, vinegar, ginger and sesame oil in a bowl.
