Ginger turkey lettuce wraps

 


Method 1

Ingredients

1 tbsp vegetable or sunflower oil

500g turkey mince

(preferably breast)

2 carrots

finely chopped

225g can water chestnuts

drained and finely chopped

200g green beans

finely chopped

2cm piece ginger

peeled and grated

2 garlic cloves

crushed

3 tbsp soy sauce

2 iceberg lettuces

halved and leaves separated

6 tbsp sticky plum sauce or sweet chilli sauce

to serve

step 1

In a large wok or frying pan, heat the oil and fry the turkey mince until browned and cooked through. Transfer to a bowl and set aside.

Tip the carrots, water chestnuts and beans into the pan and stir-fry for 2 mins. Add the ginger and garlic, drizzle over the soy and stir-fry for 1-2 mins more. Add the mince and stir-fry until hot. Season to taste.

step 3

To serve, pile the turkey and veg into lettuce leaf ‘cups’ and drizzle over the plum or chilli sauce.

🥬 Ginger Turkey Lettuce Wraps Recipe

🧂 Ingredients (serves 3–4):

For the filling:

Ground turkey (minced) – 500g (about 1 lb)

Ginger (fresh, grated or finely chopped) – 1 tbsp

Garlic (minced) – 2 cloves

Spring onions (sliced) – 2–3

Carrot (grated or finely chopped) – 1 medium (optional, for crunch)

Soy sauce – 3 tbsp

Hoisin sauce – 2 tbsp

Sesame oil – 1 tsp

Rice vinegar or lime juice – 1 tbsp

Chilli flakes or sriracha – optional, to taste

Salt & pepper – to taste

Neutral oil (e.g. vegetable or sunflower) – for cooking

For serving:

Lettuce leaves – 1 head of iceberg, gem, or butter lettuce (washed and separated)

Extra toppings (optional):

Crushed peanuts or cashews

Extra spring onion

Fresh coriander

Lime wedges

Pickled veggies or cucumber slices

Sriracha or chilli oil drizzle

🧑‍🍳 Instructions:

1. Prepare your ingredients:

Wash and separate lettuce leaves. Set aside to dry.

Chop/grate ginger, garlic, and other veg.

2. Cook the turkey filling:

Heat a little oil in a large pan or wok over medium-high heat.

Add garlic and ginger, sauté for 30 seconds until fragrant.

Add the ground turkey. Cook, breaking it up with a spoon, until browned and cooked through (about 6–8 minutes).

Stir in soy sauce, hoisin, sesame oil, and vinegar. Add carrots and spring onions.

Cook for another 2–3 minutes until sauce is slightly reduced and coats the meat.

3. Taste and adjust:

Add chilli flakes or sriracha if you want heat.

Adjust seasoning (soy for saltiness, vinegar for tang, hoisin for sweetness).

4. Assemble:

Spoon warm turkey mixture into lettuce leaves.

Top with your choice of garnishes.

🧾 Serving Suggestions:

Serve as a light main with steamed rice or noodles.

Great as a party starter or low-carb lunch.

Pairs well with a chilled white wine or iced green tea.

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
