Pineapple, beef & ginger stir-fry

 

Method 1

Ingredients

400g rump steak

thinly sliced

3tbsp soy sauce

2tbsp soft brown sugar

1tbsp chilli sauce

1tbsp rice wine vinegar

2tsp vegetable oil

thumb-sized piece ginger

cut into fine matchsticks

4 spring onions

cut into 3cm lengths

200g pineapple

cut into chunks

handful coriander

leaves, to serve

rice

and greens, to serve (optional)

step 1

Mix the steak, soy sauce, sugar, chilli sauce and vinegar together, and set aside for 10 mins.

step 2

Heat a wok with 1 tsp of the oil. Lift the steak from the marinade and sear, in batches, then remove. Add a bit more oil and fry the ginger until golden. Add the spring onions and pineapple, and return the steak to the pan. Stir to heat through for 1 min, then add any remaining marinade. Keep stirring until the marinade becomes thick and everything is hot. Serve sprinkled with coriander, and with rice and greens, if you like.

🍍🥩 Pineapple, Beef & Ginger Stir-Fry

📝 Ingredients (Serves 2–3):

For the stir-fry:

300g beef steak (e.g. rump, sirloin, or flank), thinly sliced across the grain

1 tbsp cornflour (cornstarch)

1 tbsp soy sauce

1 tbsp oil (vegetable, sunflower, or peanut)

1 thumb-sized piece of fresh ginger, peeled and finely julienned or grated

2 garlic cloves, minced

1 red pepper, sliced

100g fresh or canned pineapple, cut into chunks

2 spring onions, sliced

Optional: A handful of sugar snap peas, green beans, or mangetout

For the sauce:

2 tbsp soy sauce

1 tbsp oyster sauce (or hoisin for sweeter version)

1 tsp sesame oil

1 tsp brown sugar or honey

1 tbsp rice vinegar or lime juice

Optional: ½ tsp chilli flakes or fresh red chilli, finely sliced

🔧 Instructions:

1. Marinate the Beef

In a bowl, toss the sliced beef with cornflour and 1 tbsp soy sauce. Let it marinate for 10–15 minutes while prepping everything else.

2. Make the Sauce

In a small bowl, mix all sauce ingredients together. Taste and adjust (more soy for salt, sugar for sweetness, or vinegar/lime for sharpness).

3. Stir-Fry the Beef

Heat oil in a wok or large frying pan over high heat.

Add beef in a single layer and sear quickly (1–2 mins) until browned but not fully cooked. Remove and set aside.

4. Cook Aromatics & Veg

In the same pan, add a little more oil if needed.

Stir-fry ginger and garlic for 30 seconds until fragrant.

Add red pepper and any other veg. Stir-fry for 2–3 mins.

Add pineapple chunks and cook for 1 more minute.

5. Bring It Together

Return beef to the pan, pour in the sauce, and toss everything together for another 1–2 minutes until the sauce thickens slightly and beef is cooked through.

6. Serve

Garnish with spring onions and serve immediately over steamed rice, noodles, or even in lettuce wraps.

🔄 Variations:

Use chicken or tofu instead of beef.

Add cashews or roasted peanuts for crunch.

Stir in a handful of fresh coriander or Thai basil for a herbal note.

Ponzu tofu poke bowl

Method 1 Ingredients 1 tbsp ponzu sauce ½ tbsp rice vinegar 5g ginger, peeled and grated 1 tsp sesame oil 300g silken tofu 100g edamame beans 250g pouch cooked quinoa 100g radishes, sliced 2 carrots, peeled into ribbons 2 spring onions, finely sliced 2 small seaweed thins, crumbled 1 tsp sesame seeds STEP 1 Combine the ponzu, vinegar, ginger and sesame oil in a bowl. Pat the tofu dry using kitchen paper and tear into chunks, then gently toss in the ponzu mixture. Baked ham hock pots
