Prawn sweet chilli noodle salad

 

Method 1

Ingredients

3 nests medium egg noodles

½ large cucumber

bunch spring onions

finely sliced

100g cherry tomato

halved

1 green chilli

deseeded, finely chopped

200g cooked king prawns

defrosted if frozen

zest and juice 2 limes

4 tbsp sweet chilli sauce

100g baby spinach

leaves

25g roasted cashew

step 1

Boil the noodles for 4 mins, then drain. Cool under running water, then drain again. Put into a large bowl, then using scissors, cut into shorter lengths.

Halve cucumber lengthways, then scoop out the seeds. Slice into halfmoons and add to the noodles with the onions, tomatoes, chilli and prawns.

step 3

Mix the lime zest, juice and chilli sauce to make a dressing and fold through noodles. Put a handful of spinach onto each serving plate, top with the noodles and cashews.

๐Ÿค Prawn Sweet Chilli Noodle Salad

๐Ÿ“ Ingredients (Serves 2):

For the salad:

150g cooked prawns (king prawns or tiger prawns work well)

150g dried noodles (rice noodles, vermicelli, or egg noodles)

1 small carrot, julienned or grated

½ cucumber, julienned or thinly sliced

1 red pepper, thinly sliced

2 spring onions, finely sliced

A handful of fresh coriander (optional)

A handful of mint or basil leaves (optional)

1 tbsp sesame seeds (optional, for garnish)

For the dressing:

3 tbsp sweet chilli sauce

1 tbsp lime juice (or rice vinegar)

1 tbsp soy sauce

1 tsp sesame oil

Optional: ½ tsp grated ginger or minced garlic for extra punch

Optional: Fresh red chilli or chilli flakes, if you like heat

๐Ÿ”ง Instructions:

1. Cook the Noodles

Boil noodles according to the packet instructions.

Rinse under cold water to stop cooking and keep them from sticking.

Drain well and set aside.

2. Prep the Dressing

In a small bowl, whisk together the sweet chilli sauce, lime juice, soy sauce, sesame oil, and any optional garlic/ginger/chilli.


3. Assemble the Salad

In a large bowl, combine the noodles, prawns, carrot, cucumber, red pepper, and spring onions.

Pour over the dressing and toss well to combine everything.

4. Finish & Serve

Garnish with chopped herbs, sesame seeds, or extra chilli if desired.

Serve immediately, or chill for 30 minutes for the flavours to mingle.

Add crushed peanuts or cashews for crunch.

Swap prawns for grilled chicken, tofu, or leftover roast salmon.

Use pre-shredded salad mix or coleslaw mix to save time.

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
