Sardines & tomatoes on toast

 

Method 1

Ingredients

2 slices sourdough

bread, toasted

1 large garlic clove

halved

135g can sardines

in olive oil

130g cherry tomatoes

halved

handful watercress

1 tbsp parsley

roughly chopped

1/2 lemon

to serve (optional)

step 1

Rub each piece of toast with the garlic. In a small bowl, mix the sardines and their oil with the tomatoes and the watercress, then season. Sit half the mixture on each slice of toast, piled high. Scatter over the parsley and squeeze over the lemon, if you like.

๐Ÿ“ Ingredients (Serves 2):

1 can of sardines in olive oil or tomato sauce (approx. 100–120g)

2 slices of good-quality bread (sourdough, rye, or whole grain)

1 large ripe tomato (or a handful of cherry tomatoes)

1 garlic clove (optional, for rubbing the toast)

Olive oil (extra virgin, for drizzling)

Salt & black pepper to taste

Chili flakes (optional, for heat)

Fresh herbs (optional: parsley, basil, or thyme)

๐Ÿณ Instructions:

Toast the Bread

Toast your bread slices to your desired crispness.

Prep the Tomato

If using a large tomato, slice thinly or grate it for a more spreadable texture.

For cherry tomatoes, halve or crush slightly with a fork.

Season with a pinch of salt, pepper, and a drizzle of olive oil.

Optional Garlic Rub

While the toast is still hot, rub the surface with a cut garlic clove for flavor.

Assemble

Spoon or spread the tomato onto the toast.

Top with sardines — whole or broken into chunks.

Finish

Drizzle a little more olive oil over the top.

Sprinkle chili flakes or fresh herbs if desired.

Add another pinch of salt and pepper to taste.

Add a squeeze of lemon juice for brightness.

Use avocado under the tomato layer for creaminess.

Top with a fried or poached egg for extra protein.

Add capers or olives for a Mediterranean twist.

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high. Lightly toast the crumpets in a toaster or under the grill. Meanwhile, mix the passata, ketchup and oregano together in a bowl. Season.
