Mozzarella sticks

 

Method 1

400g block mozzarella

(not in water)

50g flour

2 eggs

150g breadcrumbs

2 tsp smoked paprika

2 tsp dried oregano

vegetable or sunflower oil

for frying

dips

Cut the mozzarella into ‘chips’. Tip the flour into a bowl and season well. Whisk the eggs in a second bowl and tip the breadcrumbs, paprika and oregano into a third. Coat the mozzarella sticks in the flour, then the egg, then the breadcrumbs. Transfer to a parchment-lined tray and freeze for at least 2 hrs.

Heat enough oil to come 2-3cm up the side of a saucepan. When hot, drop in a test chip – it should sizzle straight away and brown within a minute or two. The secret is to cook them long enough to crisp up the outside without letting the mozzarella ooze out – it may take you a few practice chips to get it right. Cook the chips in batches and drain on kitchen paper. Serve hot with your favourite dip.

Method 2

🛒 Ingredients (Makes about 12 sticks)

12 mozzarella string cheese sticks

(or cut a block of mozzarella into thick strips)

1 cup plain flour

2 large eggs

2 tbsp milk

1 cup breadcrumbs (panko gives extra crunch)

½ cup grated Parmesan (optional but tasty)

1 tsp garlic powder

1 tsp Italian seasoning (optional)

Oil for frying (vegetable or sunflower)

Marinara sauce (for dipping)

1️⃣ Prep the coating station

Bowl 1: Flour

Bowl 2: Eggs + milk (whisked)

Bowl 3: Breadcrumbs + Parmesan + garlic powder + seasoning

2️⃣ Coat the cheese

Roll each mozzarella stick in flour

Dip into egg mixture

Coat well in breadcrumbs

Dip back into egg

Coat again in breadcrumbs (double coating prevents leaks!)

3️⃣ Freeze (Important!)

Place coated sticks on a tray and freeze for at least 1 hour.

This stops the cheese from melting too quickly while frying.

4️⃣ Fry

Heat oil to about 175°C / 350°F

Fry 2–3 at a time for 30–45 seconds until golden

Remove and drain on paper towel

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high. Lightly toast the crumpets in a toaster or under the grill. Meanwhile, mix the passata, ketchup and oregano together in a bowl. Season. Chop your chosen toppings into small pieces – young children can tear basil, or chop soft veg in a cup using safety scissors. step 2 Line a baking tray with foil.
