Butter bean, chorizo & spinach baked eggs

 

Method 1

Ingredients

½ tbsp olive oil

1 red onion

sliced

1 garlic clove

chopped

1 tsp chilli flakes

100g chorizo

sliced into thin rounds

400g can butter beans

drained

100g spinach

4 medium eggs

small handful coriander

(optional)

step 1

Heat oven to 220C/200C fan/gas 7. Heat the oil in a medium frying pan (ovenproof if you have one) over a medium heat. Add the onion and cook for 3 mins until starting to soften.

Add the garlic, chilli flakes and chorizo, and fry for another 2 mins before adding the butter beans and a generous pinch of salt. Stir to combine, then cook for 2 mins more. Add the spinach and a splash of water and stir until wilted. Remove from the heat.

If your pan isn’t ovenproof, tip the mixture into a medium casserole dish. Make four dips in the mixture with the back of a tablespoon and crack the eggs into each hole. Sprinkle with salt and freshly ground pepper (and extra chilli, if you like), then bake for 5-6 mins until the egg whites are set and the yolk is still runny. Serve with a scattering of chopped coriander, if you like.

Method 2

🍳 Ingredients (serves 2–3)

1 tbsp olive oil

100–150 g chorizo, sliced or crumbled

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1 can (400 g) butter beans, drained and rinsed

1 can (400 g) chopped tomatoes (or 3 fresh tomatoes, chopped)

2 big handfuls fresh spinach

3–5 eggs

Salt and black pepper, to taste

Fresh parsley or coriander, chopped (for garnish)

Optional: chili flakes for heat, feta cheese for topping

👩‍🍳 Instructions

Preheat oven

Set to 180°C (350°F).

Cook the chorizo

Heat olive oil in an oven-safe pan. Add chorizo and cook until it releases its oils and starts to crisp (about 4–5 minutes).

Add aromatics

Stir in onion and cook until soft (3–4 minutes), then add garlic and smoked paprika for another minute.

Build the base

Add butter beans and chopped tomatoes. Simmer for 8–10 minutes until slightly thickened.

Add spinach

Stir in spinach and cook until wilted.

Season

Taste and adjust salt, pepper, and chili flakes if using.

Add eggs & bake

Make small wells and crack eggs into them. Transfer to oven and bake for 8–12 minutes, depending on how runny you like your yolks.

Finish & serve

Sprinkle herbs (and feta if using). Serve straight from the pan with crusty bread.

🌿 Tips & Variations

Swap chorizo for spicy sausage or keep it vegetarian with smoked mushrooms

Add roasted red peppers for sweetness

A drizzle of olive oil or yogurt on top adds richness

Serve with toasted sourdough or flatbread

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
