Method 1
Ingredients
1 tbsp rapeseed oil
2 tbsp chipotle paste
1½ tbsp honey
8 chicken drumsticks
1 lime
zested and juiced
1 small avocado
stoned
2 tbsp fat-free Greek yogurt
125g each red and white cabbage
both shredded
1 large carrot
cut into matchsticks
3 spring onions
sliced
4 corn on the cobs
steamed, to serve (optional)

Heat the oven to 200C/180C fan/gas 6. Whisk the oil, chipotle paste and honey together in a large bowl. Add the chicken and toss to coat, then spread out on a non-stick baking tray. Roast for 30 mins, turning halfway through.

Put the lime zest and juice, avocado flesh, yogurt and a good pinch of salt into a blender and blitz until completely smooth. Put the sauce in a large bowl with the cabbage, carrot and spring onion and toss to combine.

Serve the drumsticks with the slaw and steamed corn, if you like.
Method 2

Chicken & marinade
4 chicken breasts or thighs (boneless, skinless)
2 chipotle peppers in adobo sauce (finely chopped)
1–2 tbsp adobo sauce (from the can)
2 tbsp olive oil
2 cloves garlic (minced)
Juice of 1 lime
1 tsp smoked paprika
1 tsp ground cumin
½ tsp dried oregano
Salt & black pepper

3 cups shredded cabbage (or coleslaw mix)
1 carrot (grated)
2 tbsp mayonnaise or Greek yogurt
1 tbsp lime juice
1 tsp honey
Salt & pepper
Fresh coriander (optional)

Tortillas or wraps
Avocado slices
Fresh salsa
Rice or quinoa
🍗 Instructions
1. Marinate the chicken
In a bowl, mix chipotle peppers, adobo sauce, olive oil, garlic, lime juice, and spices.
Coat chicken well and marinate for at least 30 minutes (or up to overnight for deeper flavor).
2. Cook the chicken
Grill or pan-fry: Cook over medium-high heat for 5–7 minutes per side until nicely charred and cooked through.
Oven: Bake at 200°C for 20–25 minutes.
Rest for 5 minutes, then slice.
3. Make the slaw
In a bowl, combine cabbage, carrot, mayo (or yogurt), lime juice, honey, salt, and pepper.
Mix well and adjust seasoning. Add coriander if using.
4. Assemble
Serve sliced chipotle chicken with a generous scoop of slaw:

Chipotle in adobo gives smoky heat—adjust quantity to your spice tolerance
Let the chicken get a bit charred for that authentic smoky taste
