Smoked salmon with prawns, horseradish cream & lime vinaigrette

 

Method 1

Ingredients

1 tbsp crème fraîche

1 tsp horseradish

sauce

4 slices smoked salmon

10 large cooked prawns

peeled but tails left on

For the salad

juice 1 lime

finely grated zest of ½

1 tsp clear honey

½ tsp finely grated fresh root ginger

2 tbsp light olive oil

2 handfuls small leaf salad

step 1

Mix the crème fraîche with the horseradish and a little salt and pepper. For the dressing, whisk the lime juice and zest with the honey, ginger and seasoning, then whisk in the oil. Lay the smoked salmon and prawns on 2 plates, then top with a dollop of the horseradish cream. Toss the salad in most of the dressing and pile on top. Drizzle the remaining dressing around the plate and serve.

Method 2

🦐 Ingredients (serves 2–3)

For the seafood:

150–200 g smoked salmon slices

200 g cooked prawns (peeled and deveined)

For the horseradish cream:

½ cup sour cream or crème fraîche

1–2 tsp prepared horseradish (adjust to taste)

1 tsp Dijon mustard

Juice of ½ lemon

Salt and black pepper

For the lime vinaigrette:

Juice of 1 lime

2 tbsp olive oil

1 tsp honey

1 tsp Dijon mustard

Salt and pepper

To serve:

Mixed salad leaves (rocket/arugula works well)

½ cucumber, thinly sliced

1 small red onion, finely sliced

Fresh dill or parsley

Capers (optional)

Crusty bread or toasted sourdough

👩‍🍳 Instructions

1. Make the horseradish cream

In a bowl, mix sour cream, horseradish, Dijon mustard, and lemon juice. Season with salt and pepper. Chill until ready to serve.

2. Prepare the vinaigrette

Whisk together lime juice, olive oil, honey, mustard, salt, and pepper until emulsified.

3. Assemble the dish

Arrange salad leaves on a platter. Layer smoked salmon and prawns on top. Scatter cucumber slices, red onion, capers, and herbs.

4. Finish

Drizzle with lime vinaigrette and serve with a generous spoon of horseradish cream on the side.

🌿 Tips & Variations

Add sliced avocado for extra richness

Swap prawns for crab or lobster for a more luxurious version

Add boiled baby potatoes to make it more filling

Use Greek yogurt instead of cream for a lighter option

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
