Teriyaki steak with pak choi & noodles

 

Method 1

Ingredients

½ tsp Chinese five-spice powder

2 lean beef steak

175g each

1 tbsp sunflower oil

2 pak choi

trimmed and quartered

1 medium carrot

thinly sliced

1 red pepper

deseeded and thinly sliced

150g pack straight-to-wok egg noodles

3 tbsp teriyaki sauce

step 1

Mix the five-spice with 1/2 tsp flaky sea salt and 1/2 tsp black pepper, and rub into the steaks. Heat 1 tsp of the oil in a large, non-stick frying pan over a medium-high heat. Fry the steak for 4-5 mins each side or until done to your liking. Transfer to a warmed plate, cover loosely with foil and leave to rest.

Pour the remaining oil into the pan, add the pak choi, the carrot and pepper. Stir-fry for 3 mins, then add the noodles and stir-fry for 2 mins more.

Pour in the teriyaki sauce and simmer for a few secs, then divide the vegetable noodles between 2 warmed plates or shallow bowls. Slice the steak thickly and place on top.

Method 2

For the steak:

2 steaks (sirloin, ribeye, or rump)

Salt & black pepper

1 tablespoon oil

For the teriyaki sauce:

¼ cup soy sauce

2 tablespoons honey or brown sugar

1 tablespoon mirin (optional)

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon cornstarch + 2 teaspoons water

For the noodles & veg:

150–200g egg noodles (or rice noodles)

2–3 heads pak choi, chopped

1 teaspoon sesame oil

1 tablespoon soy sauce

2–3 tablespoons water or stock

🍳 Instructions

1. Cook the noodles

Boil according to package instructions, then drain and set aside.

2. Cook the steak

Season steak with salt and pepper.

Heat oil in a pan over high heat.

Sear steak 2–4 minutes per side (depending on thickness and desired doneness).

Remove and let it rest (very important for juicy meat).

3. Make the teriyaki sauce

In the same pan:

Add soy sauce, honey, mirin, vinegar, garlic, and ginger

Simmer for 2–3 minutes

Stir in cornstarch slurry and cook until thick and glossy

4. Slice & glaze the steak

Slice steak against the grain

Return to the pan and coat with the teriyaki sauce

5. Stir-fry pak choi & noodles

In another pan (or after removing steak), heat sesame oil

Add pak choi and stir-fry 2–3 minutes

Add noodles, soy sauce, and a splash of water/stock

Toss until heated through and slightly saucy

6. Serve

Plate noodles and pak choi

Top with teriyaki steak

Spoon extra sauce over everything

🌟 Tips & Variations

Sprinkle sesame seeds and sliced spring onions on top

Add chili oil or fresh chili for heat

Swap steak for chicken or tofu if you want a lighter option

For extra depth, add a splash of lime juice just before serving

Crumpet pizzas

  Method 1 Ingredients 6 crumpets 4 tbsp passata 4 tbsp ketchup ½ tsp dried oregano toppings of your choice (peppers, cherry tomatoes, red onion, sweetcorn, olives, ham and basil all work well) 75g cheddar cheese grated step 1 Heat the grill to high.
